Chocolate Lava Cake Recipe

Warm, gooey, and chocolate-y are by far some of the best adjectives to hear when it comes to dessert. And, good news: today's recipe is all three! I first made these lava cakes a few years back, and have been in love with them ever since. I mean-- look at them. They're just so rich, and delicious, and perfect.
This recipe makes about six individual lava cakes, give or take. {Adapted from the recipe on the blog "Everyday Occasions"}
The first thing you are going to want to do is make the chocolate mixture (the most important part!)
In a medium sized, microwave safe bowl, combine the butter and chocolate chips (any kind will do, but I'm always partial to semi-sweet).

Then add your milk to the same bowl. A note: the original recipe called for cream, but as I was out, milk had to do. I've made this recipe with both milk and cream, so just use whichever you have on hand.
Heat this mixture in the microwave in thirty second intervals, until the chocolate chips are melted and the mixture is smooth.

In a small bowl, whisk together the sugar and flour. Combine together the wet mixture, dry mixture, and your eggs until they form a smooth batter.

Next, prepare the cupcake pan. First brush melted butter all around the inside of each cup. Then, sprinkle in some cocoa powder to coat each individual tin. Shake the pan over a sink or trashcan to remove the excess powder.

Fill each cupcake cup about 3/4 of the way full with the batter. Bake at 450 degrees for ten minutes, then remove the cakes from the oven and let cool for five minutes. Flip over onto a plate or serving dish (the cakes should pop right out). Serve plain or with whatever toppings you'd like (e.g. fruit, whipped cream, ice cream). My favorite is with a generous sprinkling of powdered sugar. The cakes should be set on the outside with a gooey, molten center. Enjoy!

The Ingredients:
1/4 cup + 2 tablespoons of butter
6 oz (3/4 cup) chocolate chips
1/4 cup milk
1/3 cup flour
2 whole eggs + 1 yolk
6 tablespoons of sugar
1 tablespoon each of butter and cocoa powder (to grease the pan)
The Method:
1. Melt the butter, chocolate chips, and milk together in the microwave.
2. In a different bowl, mix together the flour and sugar.
3. Combine the flour mixture and the chocolate mixture, then mix in the eggs.
4. Brush the melted butter into a cupcake tin, then sprinkle in enough cocoa powder to coat.
5. Fill the cups 3/4 full with batter and bake at 450 for ten minutes.
6. Remove from the oven and let cool for five minutes before flipping the cakes out of the pan.
7. Eat!
