How to Make the "World's Best Mac n Cheese"

Listen up, y'all. I love mac n cheese. SO much. If I'm ever hard-pressed to pick a favorite food (which is always a difficult choice) mac n cheese is what usually rises the victor. Unless of course desserts are involved, because that's another matter entirely. But needless to say, I've tried a lot of mac n cheese in my lifetime, whether it be from a box, a restaurant, or my own kitchen. I rarely ever meet a mac n cheese I don't like (except you pimento mac n cheese, you're gross).
Now, there's a restaurant in Seattle that claims to have the "World's Best" mac n cheese. Unfortunately for me, I've never had the opportunity to go to Seattle. But, this restaurant thankfully has posted a copy of their recipe online. So I of course had to try this thing out, and let me tell you: it's amazing. I hesitate to call it the best (because there is still so much mac n cheese left in the world to try) but I daresay it is one of the best. Top three I've ever had, easily. It's definitely the best recipe I've ever found for making mac n cheese at home. The original recipe calls for some cheeses that can be harder to find, so I've changed it up a little by adding more common cheeses (don't worry, it still tastes fabulous). All right folks, here it is, the recipe for the "World's Best" Mac n Cheese. (recipe adapted from Beecher's "World's Best" Mac n Cheese)
The Ingredients:
2 tablespoons of butter
3.5 tablespoons of all-purpose flour
1.5 cups of whole milk
1.75 + 1/4 cup of cheddar cheese
1/4 + another 1/4 cup of a lighter cheese, I usually use something like colby jack
1/2 teaspoon of salt
1/2 + 1/4 teaspoon chipotle chili powder
1/8 teaspoon garlic powder
6 oz pasta (I find shapes such as penne and fusilli best for this)
The Method:
1. First, cook your pasta in lightly salted water, then drain and set aside.
2. While the pasta is cooking, begin making your sauce by creating a rue. Melt the butter in a saucepan, then stir in all of the flour. Cook this mixture, while stirring, over medium heat for two minutes.
3. Next, you will add all of the milk and cook until the mixture visibly thickens (don't forget to keep stirring!). This should take about ten minutes.
4. Once the mixture is properly thickened, take it off the stove and add the 1.75 cups of cheddar cheese, 1/4 cup of colby jack (or something similar), salt, 1/2 teaspoon chili powder, and the garlic powder. Mix this up until the cheese is completely incorporated and the sauce is smooth.
5. Mix the pasta into the sauce until everything is evenly coated.
6. Next, grease an oven-safe dish and pour the mac n cheese mixture into it. Sprinkle the remainder of both kinds of cheese and chili powder on top evenly.
7. Bake the dish in a 350 degree fahrenheit oven for 20 minutes, uncovered.
8. Eat!
There you have it, one of my all-time favorite recipes! I normally double the recipe for my family, so I'd guess this original-sized version could be a side for about 3-5 people, depending on how hungry everyone is. This recipe is so delicious and easy, go try it out!
